Pumpkin Pancakes
A nurse that Jared works with gave him this recipe for pumpkin pancakes that he made for us on Saturday...yumm!
Pumpkin Pancakes
Mix together in Bowl (dry ingredients)
1 cup flour
3 T. sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
Mix together in bowl (wet ingredients)
1 cup buttermilk
1 egg
1/2 cup pumpkin
Add wet to dry and mix until smooth
Fry as usual
Sprinkle with chopped nuts before turning

I made these on Halloween at our house, and they are yummy! I didn't try the nuts though, I will have to try that next time.
ReplyDeleteThe nuts were really good! I didn't know how it would be, but we liked the pancakes better with nuts than without.
